RECIPE OF THE WEEK


                                                        Mmm Mmm Good!
Chicken Manicotti
  • 12 manicotti shells, uncooked
  • 1/4 lb. Velveeta Cheese, cut up (1/4 lb. = 2 oz.)
  • 1 can cream of chicken soup
  • 2 c. frozen broccoli florets
  • 1 1/2 c. water
  • 3 large chicken breasts, cut into small strips (no need to cook first)
  • 1/4 c. parmesan cheese
-Preheat oven to 400 degrees.  Mix soup, water and Velveeta in microwavable bowl.  Microwave until Velveeta is melted and mixture is well blended.  Pour 1/3 of the soup mixture into the bottom of 13x9" baking dish.  Add frozen broccoli to remaining soup mixture.
-Stuff pasta with chicken strips; place in baking dish.  Cover with remaining soup mixture and sprinkle with parmesan cheese.  Cover with tinfoil.
-Bake for 45-50 min. until pasta is tender and chicken is cooked through.

ONLY 9 CANDLES?

RECIPE OF THE WEEK

FIESTA SALAD (This is my rendition of the popular Cafe Rio Salad)

                                                                                               YUMMY!! 
Ingredients:
  • flour tortillas
  • grated cheddar cheese
  • spanish rice (I use minute rice mixed with tomato sauce, taco seasoning, and a bit of salsa)
  • a can of black beans or pinto beans, heated
  • a can of corn, heated
  • meat (optional) I like it vegetarian style, but feel free to use shredded beef, chicken, or pork (you can make it yourself or buy it pre-made at the store.)
  • lettuce
  • garnish with sour cream, guacamole, and the salad dressing of your choice.
  • top with a small amount of crumbled tortilla chips
-Put tortillas on an oven-safe pan, top with a fair amount of grated cheese and broil in the oven until cheese is melted. (Keep an eye on them, tortillas will burn fast!)
-Put tortilla on a plate and layer with heated rice, beans, corn, meat, lettuce, & your garnishes.
-ENJOY!  
*I like just sour cream and guacamole, no dressing.  Tim likes only salad dressing, no sour cream and guacamole.

CEDAR CITY

We love going to Cedar City to spend time with the Stubbs' clan. We always have so much fun in Cedar and hope to move back there someday. Addi and Hally just love their cousins. Thank you so much, Larry & Becky for always letting us stay in your home.

VALENTINE'S DAY IDEA

This is what I gave my husband last year for Valentine's Day. I got the idea from a friend and I think it turned out so cute. Here is a list of supplies you will need:

  • 4 strips of 11" x 5 1/2" card stock
  • Cute Valentine paper
  • Ribbon and other cute embellishments
  • Glue
  • Pictures of you and your significant other
Fold the card stock pieces in half. Glue the papers together in an accordion style. (It's important to lay it out before you start gluing.) You should have 5 surfaces to work with. Be creative and decorate however you want. On the third and fifth pages I made a pocket. The third pocket has a removable note that says, "10 reasons why I love you." In the fifth pocket you can put a gift card (I put Jazz tickets in this slot). When you are done it folds up nice and compact like this.
