RECIPE OF THE WEEK - Tim's Favorite

YUM YUM!

SWEET AND SOUR MEATBALLS OVER RICE

Ingredients for the sauce:

1 can pineapple tidbits 

1 1/2 tbsp. cornstarch 

1/4 c. brown sugar

2 tbsp. water

1/4 c. white vinegar

1 tsp. soy sauce

15-20 frozen homestyle meatballs

2 c. Minute Rice, cooked 

-Mix the cornstarch and water to a paste over medium heat.  Add pineapple juice (reserve the tidbits), vinegar, br. sugar, & soy sauce.  Mix over medium heat until thickened.  Add frozen meatballs (or homemade if you're really gung ho), cover, reduce heat to medium-low and simmer for 10-15 min. until tender.  Put over the rice and enjoy.

-Possibilities are endless.  Use chicken, pork, beef, or use it with your favorite Asian dish.  If you are a pineapple fan you can stir in some of the reserved pineapple tidbits at the end of the cooking time.

6 HABITS OR FACTS ABOUT ME

1. I think I may have a slight case of OCD (Obsessive Compolsive Disorder). I have to have certain things in my house a certain way. For instance, the pillows on my bed have to be perfectly straight. I will go to the trouble of moving them 1 cm. to make them exact. My bedspread has to be equally long on both sides; I count the linolium squares on both sides of my kitchen table to make sure it is perfectly center ( I even measure so the centerpiece on top of the table is exactly center.); picture frames and different decor. have to be at the perfect angle; even my kids toys have to be a certain way, and these are just some examples. In my mind my house is not clean until everything is in the "perfect" spot, even up to the last centimeter. Now keep in mind that my house has never been "perfectly" clean and never will be "perfectly" clean. It seems that everything behind a closet or a cupboard is completely messy and this drives me crazy.
2. I think potatoes are creepy when they're growing the long sprout things. I can't even stand to touch them, look at them, and I most certainly would never peel them.
3. Peanut butter and jelly is my staple food. Skippy creamy style is the very best. Forget the bread, I just eat the decadent spread right out of the jar. I heard that peanut butter is good for you and so now I use that to justify eating it almost everyday.
4. I hate to run! (This doesn't mean I don't like to exercise.) I've tried it again and again and, nope I still can't stand it. Now I don't mind running if it is to chase my kids or to participate in a sport, but to run just for the sake of running, no.... running is not for me.
5. I (like my sister in-law Kr ista), like to watch T.V. Since the invention of DVR, I record lots of stuff that isn't even worth watching, but it has sucked me in. Reality is even one of my favorites. I have always been ashamed to admit it, but it's true. (Come on I know there are plenty of you out there just like me.)
6. I love guitar hero and I don't even own a gaming system. Sometimes one of the little boys in my daycare will bring it and I get so excited. Then when the kids are all down for their naps, I jam out. I think the reason I love it so much, is because I secretly wish I really was a superstar, but sadly I have no great talents to merit such a dream.

CHEESEHEADS!!!

Since the Super Bowl is coming up, I thought I would post these pictures of my fanatical husband. You may or may not know that the Green Bay Packers had a chance to go to the Super Bowl. We were watching the dreaded game where Brett Favre threw an interception at the last second to lose the game. I'll just say..... it was a bad day at our house.

This is my husbands best friend Benton. They drove all the way to Denver together to watch the Green Bay/Bronco's Game. Their dream is to someday go to Lambeau Field.

Pictures of Me - This is it! It seems that I am always behind the camera!

....and then there is me. Nothing very interesting really. I have a cute husband and 2 cute kids. I love being a mom!! I am a stay at home, work at home mom. I have an in-home daycare. Right now I have 4 daycare kids, but I usually try to have 6 daycare kids. That equals 8 kids total! People always ask, "How do you do that?" Really, it's not as hard as it seems. It's really good money and I get to stay home with my own kids. I am trying to remember what I used to do before kids were my life? I was a ballroom dancer back in the day. Now I just watch "Dancing with the Stars" and fantasize. I also like to shop (for anything that gets me out of the house), play with my kids, have 1 on 1 time with Tim, paint and decorate my house and I guess thats about it.

This is my cute husband Tim. We have been married for nearly 5 years. He loves his family so much. He is always taking his kids to Jazz games, movies, the zoo, the park, etc. It is important to him that his kids have fun. Tim is also a great husband. We really are perfect for each other. He has sparkling blue eyes and a smile to die for. His hobbies include: Skiing (snow and water), golfing, backpacking, camping, fishing, racquetball, softball, and anything outside. Oh yes, I can't forget to mention that my husband is an avid sports fan! He doesn't miss a Jazz game, Packers game, BYU game, or Dodgers game. Love ya Tim!

This is Hally, she is 19 months old. She is our sweetheart. Well we used to call her our sweetheart, but she has recently started hitting us and screaming at us. We think it is funny and laugh at her, although we probably shouldn't. Everyone says she looks just like me, her mom, except for blue eyes and blonde hair. She is very little for her age. She loves to climb on and jump off of everything. Hally adores her big sister, Addi, and follows her everywhere. Hally, you're my angel.

This is Addison she is my oldest daughter. She turned 3 in October. Addi has a very tender heart, she is always concerned about others. She loves to read books! She speaks very well for her age. Addi likes to organize stuff, she has particular routines that have to be done in a certain order or else she gets upset. Addi loves anything chocolate or candy. She also loves her grandparents and her cousins. Addi, your smile melts my heart!
