DISNEY PRINCESSES ON ICE

I took Addi to Disney Princesses On Ice last week. We had so much fun! She dressed up like Tinker Bell and was just in awe through the whole show. She said, "Mom, I wish I was Cinderella." It was so magical for a little kid, and for myself.

This is Addi with one of her best friends, Roxy. Roxy and her mom accompanied us to this grand affair.

LOOK AT MY NEW BUFFET!

I am so excited about my new buffet/hutch thing, I just had to post a picture. I purchased this cute little treasure at my absolute favorite place to shop, a little boutique called The Porch. It is located in Springville, on main street. The quaint little shop is in a darling old house. The merchandise is a bit expensive, but if you wait for a coupon you can strike gold just like me!

BEAR LAKE PHOTOS

My sister, Tiffany, is starting a photography business. When we went to visit her at Bear Lake last weekend, she took these pictures of us. I think they turned out really good. There is a cool, old barn in the back of their house, so we hiked through knee deep snow to get there! Crazy cold! The sun reflecting off the snow was so bright, it was hard not to squint. Here are a few pictures that she sent me, I will post some more later when I get them. Tiffany really has an eye for taking pictures and I think she will do awesome with her business. Tiff is starting a photography blog. Check it out!

RECIPE OF THE WEEK

Delicious! 
Chicken Pillows
  • refrigerator crescent rolls, 8 count
  • 8 oz. pkg. cream cheese, softened
  • 2 chicken breasts, cooked and cut into small pieces (season with McCormick Montreal Chicken Seasoning)
  • 1/2 c. butter, melted
  • italian bread crumbs
  • 1 can cream of chicken soup
  • 1/2 can of water
  • 2 c. white minute rice 
-Preheat oven to 375 degrees.  In a small bowl, mix together the cream cheese and the chicken .  Put a small scoop of the cream cheese filling in the center of a flattened out, triangle shaped, crescent roll.  Fold the corners of the triangle over and pinch the dough together in order to make a pillow.  Dip the pillow in the bowl of melted butter, coating evenly.  Then roll the pillow on a plate of italian bread crumbs, coating evenly.  Place all eight chicken pillow on a cookie sheet and bake for 15-20 minutes, or until golden brown.
-Meanwhile, heat the can of soup with half a can of water.  (You want a thicker consistency.)  
-Cook the rice as instructed on the box.    
-Drizzle the cream of chicken soup over the chicken pillows and the rice.
*It is really important to use McCormick Montreal Chicken Seasoning.  It really ads a lot to the flavor of this dish.

FAREWELL TO A GREAT PLAYER.... A GREAT MAN

Some of you may already know that Brett Favre, quarterback for the Green Bay Packers, is retiring. You may ask, "Why does this matter?" Well, Brett Favre is a household name in the Stubbs' home. Tim has faithfully watched Favre and the Packers through good times and bad times. Some may argue that he was one of the greatest quarterbacks to ever play the game. Let's take a look at some of his stats:
  • 3 MVP awards (most in NFL history)
  • 160 wins (most in NFL history)
  • 253 consecutive starts (most in NFL history)
  • 442 touchdown passes (most in NFL history)
  • 61,657 passing yards (most in NFL history)
  • 5,377 completions (most in NFL history)
The list goes on and on my friends. Brett Favre was truly a remarkable player. Favre has one Super Bowl ring which may not sound like a lot to you, but the rings don't mean everything. He has accomplished so much more than other players with so many rings. Favre is not only a phenomenal football player, he is also an excellent father and husband. Things definitely won't be the same without him. He was a great player.... a great man.

HOW COULD THIS HAPPEN?

I am very particular when it comes to doing my laundry. Everything has to be separated into the "correct" pile and folded in the "correct" way. I sort my laundry into the following piles:

  • Whites
  • Darks
  • Pastels
  • Towels & Sheets
The other day I was washing my white towels. The buzzer went off on the washer, so I ran downstairs to the laundry room to transfer the washed towels into the dryer. I opened the lid and to my disbelief I found pink towels. I gasped in horror! How could this happen? I am so careful when I sort my piles. I started looking through the towels and lo and behold, there was Addi's new red shirt! Who did this to me?! Was it one of my kids? Was it a ghost? Who? Pink towels do not mesh well with my OCD. (I explained my OCD in an older post.) I took the red shirt out of the load and immediately washed the towels again with lots of bleach. The bleach helped somewhat, but I still have light pink towels. Okay, so this was nobody's fault but my own. I must have gathered the red shirt up with my pile of white towels. I guess this happened just to teach me not to be so obsessive compulsive with the little, meaningless things in life. I really think that God has a sense of humor. :) I will deal with the pink towels..... until I go to the store, then I will buy some new ones. :)
